Roasted Brussels Sprouts

Ingredients

Brussels sprouts, trimmed
About a dozen peeled cloves of garlic
4 cloves garlic, crushed
Olive oil
Fresh or dried sage, thyme, and/or oregano (chopped)
Salt
Pepper

Instructions

Bring a large saucepan of salted water to a boil.
Add the sprouts and boil for 3 minutes.
Drain, then tip into a large bowl.
Add the oil, herbs, salt, pepper, and garlic (both whole cloves and crushed).
Toss the sprouts well.
Cover, and allow to marinate for at least 1 hour, tossing them every 15 minutes.*
Preheat oven and baking pan to 400F/200C.
Tip the sprouts and the marinade into the baking pan and roast for 20 minutes.
Serve and enjoy!

* Another method is to make the sprouts the day before and tip them into a large zip-lock bag, expel excess air, then allow the sprouts to marinate in the bag overnight in the fridge.  This is useful if you’re doing a big dinner party because it reduces the preparation effort on the day of cooking.
